Ingredients
300 g. cucumbers, sliced1 t. salt1/3 c. rice vinegar (no sugar)1/8 t. stevia2 t. Bragg's Liquid Aminos1/4 t. grated fresh ginger root
Directions
Cut cucumbers into thin slices, place in bowl and sprinkle with salt. Let stand at room temperature 30 minutes or until cucumbers are softened. Drain and rinse thoroughly with water to get all the extra salt out.

Combine vinegar, sugar, braggs, and gigner in serving bowl. Add cucumbers and combine well. Chill thoroughly before serving.

    I make this with a small amount of finely diced onion and 1 or 2 diced plum tomatoes. It is very good, hubby likes it too though he's not on the diet. Good with / without my additions. - 10/12/11
