Ingredients
1 onion, cut in fourths1 tomato, cut in fourths12 oz ground beef1/2 tsp allspice1/2 tsp cinnamon1 tsp salt1/4 tsp pepperrefrigerated biscuit dough (I prefer Pillsbury) about 3 rolls (30 biscuits)
Directions
place onion and tomato in a food processor and process very fine, almost pureed. Mix tomato and onion with ground beef and add spices (more or less to taste).
Spray a cookie sheet or the bottom of your broiler pan with cooking spray and flatten each biscuit onto the pan to about 3 inches diameter--use one roll at a time, 10 biscuits per batch. Add about 1 tablespoon of the meat mixture onto the center of each biscuit and spread it out with your fingers or a spoon.
Place in a 350 oven for about 8 minutes, until the biscuits start to puff, but are not yet done, and the bottom is starting to brown.
Turn the oven to broil, or place the pies under the broiler (Depending on your oven) and broil about 4 minutes, until the meat looks done and the edges of the biscuits are brown but not burnt. Remove from oven and remove from cookie sheet with a spatula. Repeat this process with each biscuit roll (you may want to re-spray the pan). These are traditionally eaten with plain yogurt. Bon apetit! Nutrition info is per biscuit. If there is a little meat left over but not enough for another roll, spread it on a half pita bread or tortilla and just broil until the meat is done. Great sandwich!!
