One Pot Turkey Lasagna Rotini

Ingredients
1.33 lb ground turkey1 small onion4 garlic cloves1/2 cup celery leaves1 Tbsp Italian seasoning (oregano, rosemary, savory, basil)1 28 oz can crushed tomatoes3 cups water1 box Dreamfields (Low Digestible Carb) Rotini Pasta2 cups Nonfat Cottage Cheese1/2 cup grated Parmesean CheeseI used 1 TBSP of Italian seasoning blend instead of separate seasonings. Dreamfields pasta is healthy carb living with only 5 grams of digestible carbs per serving (3/4 cup). The recipe includes 1 cup servings.
Directions
Put onion, celery leaves, and garlic into food processor and finely chop. Place turkey, veggie mixture and spices in a large pot and cook on medium high heat until meat is brown. Drain any remaining liquid. Return to stove and add tomatoes, water, and low carb noodles. Bring to a boil. Turn heat down and simmer for 10 minutes or until the noodles are al dente. Add cheeses and simmer for 5 more minutes or until warm. Makes 14 - 1 cup servings. Great for family and friends gatherings! Even better leftover!!
