Vegetable Frittata

Ingredients
2 whole eggs2 egg whites1/2 c. reduced fat Cheddar cheese3/4 c. mixed bell peppers, chopped.5 c onion, chopped3 asparagus spears, sliced Cooking spray
Directions
Preheat oven to 350 degrees

In large bowl, whisk eggs and egg whites until well blended. Add peppers, onion and asparagus. Mix well. Add cheese.

Spray muffin tin cups with cooking spray and pour 1/2 c. of egg mixture into 4 muffin tins.

Bake for 20 minutes checking after 15 for doneness.
