Cold Spinach Apple Soup (raw)

Ingredients
4 cups tightly packed spinach1 apple, chopped1 cup water, plus a little more to thin if necessary1 tsp fresh lemon juice, or more to tasteDash salt1 ripe avocado, chopped
Directions
Directions:
1. Place the spinach, apple, lemon juice and salt in a blender and process until smooth.
2. Add the avocado and process until smooth.
3. Add the remaining ½ cup of water to thin, if necessary, and blend briefly.
4. Serve immediately; or for a chilled soup, refrigerate for 2 hours before serving.
