Turkey Bolognese with Veggies

Ingredients
-2.5 onions (chopped)-6 cloves of garlic (chopped)-3 green bell peppers (chopped)-2.5 cups of slide baby portabello mushrooms-1 lb. ground turkey (93% lean)-1 can tomato paste-1/2 jar of Ragu pasta sauce (Parmasen & Romano)- 3 cups of water-2 tbsp of evoo-Salt & pepper to taste-1 lemon (juice)
Directions
-saute all veggies, onions and garlic with 1 tbsp of EVOO until soften
-add half of tomato paste and mix evenly, remove from pot
-add remaining EVOO and add ground turkey to brown then add tomato paste and season to taste
-combine veggie mix with turkey mix and add half jar of Ragu and water
-let it simmer for 20 minutes and season to taste
-I like to add the juice of 1 fresh lemon
-enjoy
