fava bean omlet

Ingredients
350 grams fresh green fava beans chopped coarsely1 cup water2 tblsp olive oil4 eggs beaten lightly
Directions
place the beans and water in a skillet and let simmer uncovered till water evaporates( don't add salt at this stage).
the skillet should be large enough so that the beans are all leveled and half covered with water.After water evaporates add oil, salt and season to taste add eggs and cook untill done.
