Dukan friendly carrot muffin

250 g soy flour1 egg1c low fat cottage cheese1/4 c milk1c grated carrots1 tbsp coriander1 tsp baking soda1 tsp baking powder2 tsps cinnamon1/2 tsp saltPepper and dried chilli pepper to taste
Pre-heat oven to gas mark 5, 350f, 180c
Peel and grate carrot.
Stir in egg with carrot.
Stir in coriander
Stir in cottage cheese and milk.
In a separate bowl, sift soy flour and remaining ingredients.
Add dry ingredients to carrot mixture and thoroughly combine.
Line muffin tin with cupcake liners.
Spoon dough into the tins to create 12 muffins.
Bake for 20 to 25 minutes.
Serving Size: Makes 12 muffins
