Ingredients
1 lb. -Boneless Chicken.5 cup- Water1/3 can- Diced tomatos1/3 can- Tomato puree.5 cup- Chopped onions.5 cup- Chopped green peppers1/2 packet- Taco seasoningBox Zatarain's yellow rice (4 cups).5 cup- Salsa
Directions
1. Start rice, per box instructions
2.Cook chicken, cut into cubes, set aside
3. Make sauce: Combine water, puree, diced tomatoes, onions, greep peppers, 1/2 packet of taco seasoning & salsa. Cook for about 20 minutes or until sauce thickens
4. Add chicken & rice- mix until combined.
*Makes about 8 cups. 1cup= 1 serving
