Baked Fish with Crumb topping

Ingredients
85g fresh breadcrumbs (2 thick slices of bread)2 tablespoons olive oil1 courgette finely grated2 tablespoons fresh parsley chopped50g freshly grated parmesan cheesezest of one lemonsalt and ground black pepper2 boneless white fish fillets eg. tarakihi or snapper.
Directions
Mix together breadcrumbs, olive oil, courgette, parsley, parmesan, lemon zest and seasoning.

Put the fish fillets on a lined baking tray. Press the crumbs in firmly to the top of each fillet, so they stick. Bake at 180 degrees celcius for 15-20 minutes until fish is just cooked and topping golden. (Can serve this with asparagus and new potatoes)
