Mom's Mashed Potato Casserole

Ingredients
8-10 medium potatoes, peeled and cubed (more if needed to feed the crowd)8oz Neufchatel cheese8oz light sour cream1 tsp garlic salt1/4 cup grated onion1-2 tbsp butterpaprika
Directions
1. Boil potatoes until done; drain well.
2. Whip cream cheese and sour cream until smooth
3. Add garlic salt and grated onion
4. Add potatoes gradually and whip until smooth. (If mixture seems dry, you can add a splash of milk)
5. Place into greased casserole dish (9 x13 or 8-9" round works well)
6. Dot with butter and sprinkle with paprika
7. Bake at 350 for 30-45 minues

**Note: Can be made a day ahead - prep through step six then cover and refridgerate
