Breaded Avocado Chicken

Ingredients
-3 tbsp cornmeal-1 tbsp cornstarch-1/2 tsp garlic salt-1/2 tsp ground cumin-1/2 cup shredded cheese (of your choice)-6 slices of avocado-1 egg-1 tbsp water-2 skinless, boneless chicken breasts-4 tsp vegetable oil-1/4 cup sour cream-2 tbsp green onion
Directions
1. In large resealable bag, combine cornstarch, cornmeal, garlic salt and cumin. In a shallow bowl, beat the egg and water. Dip the chicken in egg mixture, then place into bag. Shake to coat.

2. Preheat oven to 375*. In a large skillet, heat oil. Cook chicken for 4 minutes on each side or until browned. Place chicken in glass casserole dish and bake for 20-25 minutes. Remove chicken and top with cheese and avocado and bake for another 5-10 minutes until done. Garnish with sour cream and green onion as desired.

    Very good! I'd like to give 4.5 stars. I made exactly as directed except baked the chicken on a rack instead of in a dish so that it would stay crispy on all sides. Next time I will up the spices & maybe add some black or cayenne pepper as well. Also, it helps if you slice the avocado quite thin - 8/14/13

    Tasty and Easy! I used chicken tenders instead of breasts. With the tenders, I didn't have to cook them on the stove top at all (and could omit the oil). I simply baked them ~15min then added the avocado and cheese and baked another 7-8 minutes. Next time I will add some more spice to it. - 5/6/10

    I'm craving it now. This was a great treat. Next time I'm going to put some cayenne pepper in the breading and use 1% buttermilk instead of the egg (I'm not a big egg fan).

    I enjoyed this dish a lot! I used Monterey Jack cheese and light sour cream. I also served with salsa - I couldn't resist! I will try other variations. I will sub the cumin for ranch mix when I want something a little different. Will use other spices too. Yummy - Thank You! - 11/3/07
