Confetti Quinoa Salad

Ingredients
1 C quinoa2 C water1 1/2 C cabbage, shredded1 carrot, shredded1/3 C red onion, chopped1 red pepper, diced1/2 C cilantro, chopped1/2 C golden raisins1 lemon, juiced1/4 C rice vinegar2 t olive oil1 t curry powder1 t salt
Directions
Prepare quinoa, allow to cool when done.
While quinoa is simmering, chop all vegetables and combine in a large bowl. Add in raisins.
After quinoa has cooled, add to the vegetable mixture.
In a small dish mix lemon juice, rice vinegar, curry powder, salt and olive oil. Mix well. Pour over quinoa veggie mixture. Toss well.
