French Lentil Rice Soup

Ingredients
6 cups vegetable stock1 cup dried lentils (I use red to make the soup creamier, but green would probably work too)1 onion chopped2 carrots chopped1 large stalk celery chopped3 cloves garlic minced3 tbsp uncooked brown rice1 tsp Herbes de provence1/2 tsp salt1/8 tsp pepper
Directions
Put all ingredients in pot, bring to a boil, reduce heat and simmer until rice and lentils are cooked.
OR put in crockpot and cook on high 4-5 hours or low for 8 hours.
You can garnish with chopped fresh parsley if you have it.
