Huevos Rancheros individual

Ingredients
2 cups (one can) black beans, rinsed and drained 2 tbsp lime juice 1 tsp minced garlic 2 tsp olive oil 1 tsp ground cumin 8 4inch corn tortillas4 eggs4 egg whites 16 tbsp salsa (1 cup), divided into 4 cilantro 1/4 cup shredded 2% milk cheddar cheese
Directions
Make black bean puree by combining first 5 ingredients (black beans thru cumin) in food processor and pulsing until thick paste forms.

Spray inside of 4 ramekin cups with cooking spray. Line bottom of ramekins with one tortilla each; then, spread 1/4 cup of bean puree on the bottom of the tortilla-lined cup. Crack one whole egg and one egg white into each cup on top of the bean puree. Follow with 1/4 cup of salsa for each. Top with another tortilla. Spray top tortilla with cooking spray or lightly brush with olive oil. Bake in 350 for 35 minutes. Serve with corn on the cob and green salad for a complete meal. You can add some cheese to the top in the last 5 minutes of cooking but adjust nutritional information accordingly.
