Ingredients
1 slice (1 oz) - Cheese - American, 2 oz - Chicken Breast - Boneless and Skinless, pre-cooked1/8 cup - Pico De Gallo, 2 eggs 0.25 cup - Peppers - Sweet, red, chopped 0.25 cup - Onions - Raw, chopped
Directions
Using a non-stick pan, start by cooking, on low heat, the onions and peppers until slightly soft. Add the pico de gallo, cook for about 1 minute. Then add the pre-cooked chicken and cook for about 1-2 minutes. Add eggs and cook until firm. Slice cheese into 1/4" strips and place into omelet. Fold omelet, plate, and enjoy.
