Vegetarian Tostadas

1 can sweet corn, rinsed1 can black beans, rinsed1 can black olives, rinsed and diced1 can Diced Tomatos with chilis2 tbsp chili powder3 8 inch flour tortillas6 subs shredded lettuce (romain)1 cup cottage cheese
Preheat your oven to 400F. Take 2 oven safe bowls and spray with non stick. Push a tortilla into each bowl and put into the oven for 5 - 10 minutes. Keep checking on them so they don't burn. They are done when they hold their bowl shape. Repeat with other two tortillas.
Rinse all canned foods except the tomatoes and add to a big pan. (You can use a fork to squish up the black beans if you want but it's not necessary; its a texture thing). Add your seasoning and set on medium to warm everything up.
When the tortillas are done fill each one with 2 cups lettuce, 1 cup filling, and 1/3 cup cottage cheese. Enjoy!
