1 large onion, preferably sweet or yellow2 tsp olive oil2 slices bread, preferably Sara Lee Delightful brand2 tsp mayonnaisesalt and pepper to taste
Slice an onion and sauté it in the two teaspoon of olive oil, adding a bit of water and then covering with a tight lid halfway through to help make them tender. When they're nicely caramelized add them to the bread (each slice spread with 1 tsp of mayonnaise - this adds wonderful flavor for not too many calories) and salt and pepper to taste. Everyone's very skeptical of this simple recipe, but after they try it they're hooked!
