Spinach Green Chile Muffin Quiche

1 Cup Onion chopped1 Cup Mushroom chopped5 Garlic cloves minced1 package frozen spinach1/4 Cup Green Chile3 Eggs4 Egg Whites1/2 Cup Whole Wheat Flour1/2 tsp Baking Powder1/2 tsp Kosher Salt1 1/3 Cup 2% Milk1/2 Cup Shredded Cheddar Cheese1/4 tsp Garlic Powder1 tsp Parsley1/2 tsp Savory
Preheat oven to 400F
Lightly grease a muffin pan
In a medium frying pan, cook diced onion, garlic and mushrooms. Add a pinch or so of your Kosher Salt to saute with it. I spray Pam cooking spray.
Set aside to cool for a few minutes
In a large bowl whisk together eggs, flour, baking powder, garlic powder, parsley, savory and remaining salt. Whisk in milk then onion garlic mushroom mixture, green chile, cheese and spinach.
Evenly divide batter into muffin tins.
Bake for 25 minutes or until center is set and golden brown.
Serving Size: Makes 12 Muffins
