2 Tbls grapeseed, olive, or coconut oil4 ears of corn, cut off the cob2 cloves garlic, diced2 Tbls cumin1 Tsp cheyenne powder or to taste1 Tsp Chipoltle powder or to taste1 large purple onion, chopped1 jalapeno diced4 cans black beans, drained1 lime juiced1 bunch cilantro chopped1 bag or 2 mangos chopped
Heat oil in skillet. Add corn and cook for about 5 minutes, stirring occasionally. Add cumin,cheyenne, and chipoltle to corn and mix well. Take off the heat and let cool.
Add everything else to a bowl and mix well. Add corn once it has cooled and mix up again. It's that simple!
