KP Cilantro Lime Shrimp

Ingredients
1 bunch of cilantro2-3 cloves of garlic, mincedjuice of two limes2 T olive oil2 lbs. of peeled, uncooked, shrimp (cocktail size)1 t of Adobo or other seasoned saltBamboo skewers
Directions
Add cilantro, garlic, lime juice and olive oil to food processor or blender and puree.

Add shrimp and puree into a plastic bag and seal. Shake to cover shrimp with the puree.

Let sit for 3+ hours.

Thread 6-7 shrimp on each skewer. Some people soak the skewers in hot water for 30 minutes prior to putting the shrimp on so the skewer doesn't burn - I don't bother.

Then grill on a low-med grill, or under the broiler, for 3 minutes on each side until just pink. Easy to overcook so watch it.

I take it off the grill and let sit under aluminum foil when there is still a little grey. Because it will cook a little more while in the foil.

    Came out really good (although I accidentally over cooked the shrimp..) The cilantro wasn't over powering, which it can be very easily. I might add a bit more garlic the next time, and there will certainly be a next time! - 6/28/11
