Sweet and Sour Stir Fry

Ingredients
1/2 cup basmati rice1/4 cup pineapple1/4 cup pineapple juice1.5 T cider vinegar1 T Ketchup1 T Soy sauce.5 T b sugar1 tsp. cornstarch3 button mushrooms (I use baby bella's)1/4 cup broccoli1/4 cup sliced onion1/4 cup sliced peppers
Directions
1. Prepare rice according to package instructions
2. In a small bowl mix the pineapple juice, cider vinegar, ketchup, soy sauce, brown sugar and cornstarch.
3. In a medium frying pan, saute the vegetables for 5 min., do not add the pineapple.
4. Add the stir fry sauce, cook for 1-2 minutes until thickened.
5. Add pineapple, stir fry until warm, about a minute more.
6. Serve over basmati rice.
