Reduced Fat Bacon Cheese Muffins

Ingredients
1 and 3/4 c. unbleached flour1/2 c. reduced fat Mexican blend shredded cheese2 tsp. baking powder1/4 c. sugardash salt1/4 tsp. cayenne pepper1 Omega 3 egg3/4 c. 1% milk1/4 c. safflower oil6 slices shoulder bacon, cooked and crumbled
Directions
Mix dry ingredients together. Mix wet ingredients separately. Add wet ingredients to the dry and mix just until you can't see any more dry ingredients. Fold in crumbled bacon. Fill muffin tins pre-sprayed with non-stick cooking oil. Bake in a 375 degree oven for approx. 20 minutes.

    The taste was wonderful. The muffin was very dry. I even added 1/2 cup more milk to the recipe and still, the muffins came out dry. I will tweak this one and keep it for breakfast. Thanks for sharing! - 6/3/12
