Chicken, Broccoli, and Cheese Casserole

5-6 cups rice cooked3 Chicken Breast boiled, skin and bone removed with onions and garlic1 pkg Broccoli Floret, thawed1 can Cream of Mushroom Soup, reduced fat1 can Cream of Chicken Soup, reduced fat1 can Broccoli Cheese Soup 98% Fat Free1 cup reduced fat Sour Cream1/4 cup reduced fat Mayo1-2 cups 2% milk (or as needed to make sauce smooth1 cup shredded Mexican blend cheese
Boil chicken breast with onions and garlic. Salt and pepper to taste. Remove chicken and use broth, with onions and garlic, to cook rice. Blend soups, sour cream, mayo, and most of the cheese(reserve some to sprinkle on top). Cut cooled chicken breast into cubes. Combine chicken, rice, and broccoli in large baking dish . Pour soup mixture over chicken mixture and combine. Add milk as needed to smooth out mixture. Bake at 350 for about 30-35 minutes or until heated through. Enjoy.
