Sweet & Sour Pork

Crushed Pineapple, one large can (15 oz or so)White Vinegar, 2/3 cupKetchup, 3 tbspBrown Sugar, 1/8 cupWater, 1/2 cupCorn Starch, 2 TbspPork Chop, Boneles, Lean, 2 lbs before trimming fatonion, one medium, choppedOne each red, yellow, & green pepper, sliced into stripsCelery, 1 cup, dicedWhite Rice - 1 1/2 cups uncookedWater, 3 cupsChow Mein Noodles - 2 cups divided equally
Mix crushed pineapple, vinegar, ketchup, brown sugar, & water in a pan over high heat until it comes to a boil. Add corn starch, bring to a boil until sauce thickens.
Meanwhile, add the uncooked white rice to 3 cups of water, cover, and bring to a boil. Once at a boil, turn the heat to low and keep covered for 15 minutes.
Trim excess fat from the pork chops and cut into bite sized pieces before cooking over med-high heat, or until there is no pink on any of the pieces. Add peppers, onion, and celery and cook until all are at the desire consistency.
Once everything is cooked to your liking, combine the pork mixture to the sauce mixture, and cook on medium heat for 5 minutes to combine flavors. Or, if you're really hungry, just dish up! It's ready to eat!
Sprinkle 1/4 cup of crunchy chow mein noodles over the top and the flavor and crunch is wonderful.
