Ingredients
Balsamic vinegar (1/3 cup)Olive Oil (2/3 cup)Garlic cloves (2)Zucchini (2)Yellow Pepper (1)Mushrooms (sliced 1 cup)Onion (sliced 1 cup)Tofu (1 firm block)Avocado (1)Salt and pepper to taste
Directions
Marinate veggies and tofu in dressing (olive oil, garlic and balsamic vinegar). Grill veggies (6 minutes). Grill tofu (2 minutes/side). Stack. Top with avocado
