Carrot Cake Bars

* Carrots, raw, 2.5 cup, grated* Old Fashioned Quaker Oatmeal- Plain (1/2 cup dry), 4 serving * Coconut Oil, 2.5 tbsp* Almond Butter, .5 cup* Almonds, .5 cup, slivered* Honey, .5 cup
Blend peeled carrots and oats in food processor until chunky.
Add in honey, coconut oil, and almond butter. Blend until mixture clumps together well.
Add almonds and mix until chopped, but leave large enough to add some crunch.
You can roll into balls and eat raw, or spread mixture in greased 13x9 inch metal pan and bake for 20-30 minutes at 350°. You will want the bars to be soft, but not mushy, like a fresh oatmeal cookie.
