Chicken and Wild Rice Soup

Onions, raw, 1 cup, choppedGarlic, 1 tspOlive Oil, 1 tbspMushrooms, fresh, 3 cup, pieces or slicesWild Rice, 1 cupChicken Broth, 8 cup (8 fl oz)2 boneless, skinless chicken breastsParsley, 0.5 cupThyme, fresh, 2 tspSherry, dry, 6 fl. ozWhipping Cream, 0.5 cup
Heat the olive oil in a large sauce pot over medium heat. Add the onions, mushrooms, and garlic; saute for 3 minutes.
Add the rice and 4 cups chicken broth
Cover and cook for 35 minutes. Add the remaining 4 cups of chicken broth and the chicken. Cook uncovered for 10 minutes. Add the cream, parsley, thyme and sherry. Simmer for 10 minutes.
