Chicken Rollatini

1/4 cup whole wheat bread crumbs, Italian seasoned2 Tbsp parmesan cheese, grated1 egg white2 cup fresh spinach, finely chopped1/4 cup low fat cottage cheese, pureed3/4 cup fat free mozzarella cheese, shredded1 cup Ragu Light, Tomato Basil5 chicken cutlets (3 oz each)
Combine bread crumbs and parmesan cheese in bowl and set aside.
Whisk egg white in separate bowl. Remove 1 Tbsp egg white to another bowl. Mix that with spinach, cottage cheese, 1/4 cup mozzarella cheese.
Spread 2 Tbsp of spinach mixture onto chicken cutlet and roll up, set aside with seam side down.
Dip chicken rolls into egg white and then into the bread crumb mixture and place into baking dish. Spray tops with nonstick cooking spray and bake for 25 minutes at 350. Remove from oven, top with sauce and remaining mozzarella cheese. Return to oven and finish baking for 3-5 minutes or until cheese is melted.
Makes 5 servings.
