vegan stuffed green peppers

6 medium to large green bell peppers cut in half lengthwise, seeded1/2 package gimme lean sausage style1 small onion chopped4 cloves garlic minced1T olive oil1 10 oz can diced tomatoes and green chilis1 can dark red kidney beans undrained1.5 cups cooked basmati rice2 jalapenos seeded and minced6T chili powder3T ground cumin3 oz daiya chedder style vegan cheesesalt, pepper and garlic powder to taste
saute garlic, sausage,jalapeno, and onion in olive oil til veggies are slightly tender. Add remainng ingrediants except bell peppers and cheese. cook tll all combined. Fill bell pepper halves with mixture mounding as much as possible. Place in baking dish, add 1/2 c water to bottom, cover and bake for 45 min to 1 hour at 350 degrees, remove from oven and sprinkle each pepper with a little cheese
