White Grain Free Bread

1 c sorghum flour1 c potato starch1/2 c garbanzo flavo2 t xanthan gum1 1/4 tsp fine sea salt2 1/2 tsp rapid dry yeast1 1/4 c warm water (110 to 155 degrees)3 Tbls extra virgin olive oil1 Tbls. honey1/2 tsp cider vinegar2 egg whites mixed with 4 Tbl. of warm water
First whisk together almond flour, potato starch, garbanzo fava, xanthan gum, sea salt, and yeast. Set a aside.
Pour the following room tempature liquids in bread machine:
1 1/4 warm (110 to 115 degrees F)
3 T extra virgin olive oil
1/2 tsp mild cider vinegar
2 egg whites whisked with 4 Tbl warm water till frothy
Gently pour the mixed dry ingredients on top of the liquid.
Set your bread machine program for 1.5 loaf medium crust or use gluten free setting.
Check the dough after a few minutes of kneading. It should be closer to muffin batter than bread dough, soft but not cake batter wet. Adjust the dry to wet ratio with a tablespoon of (almond or potato) flour or warm liquid.
Serving Size: 13 thin slices of bread
