Mediterranean couscous salad

Ingredients
1 cup chicken broth3/4 cup uncooked couscous1 cup roma tomatoes1 cup cucumber1/4 green onion1/2 cup halved pitted kalamata balck olives1/4 cup fresh dill2 Tablespoon lemon juice2 Tablespoon olive oil1/8 teaspoon salt2 tablespoon crumbled feta cheese
Directions
Serving Size: 8 servings 1/2 cup each
heat broth stir in couscous remove from heat cover let stand 5 minutes.
in large bowl place tomatoes, cucumbers, olives, onions, dill and stir in couscous.
Small bowl beat lemon juice, oil and salt with wire whisk until well blended pour over vegetable mixture and toss. Cover refrigerate for 1 hour to blend flavors. Just before serving sprinkle with cheese....
