Vegetable Quesadilla

Ingredients
*Whole Wheat Tortilla, 2 Mexican Style Taco Cheese, 0.33 cup Onions, raw, 1 cup, chopped Roasted Red Peppers, 0.25 cup Olive Oil, 1 tbsp
Directions
Saute onions in olive oil, until caramelized.
Lay out one tortilla.
Add cheese, onions, and peppers.
Lay tortilla on top, throw in oven at 350 and cook until brown.

Serving Size: makes 1 quesadilla
