Doni's Veggie Korma (Rice, Veggies & Yellow Curry)

Ingredients
1/4 cup long-grain brown rice1 medium carrot1/8 c. chopped onion1 c. fresh broccoli1 c. fresh cauliflower3 oz. tofu1/2 c. yellow curry sauce
Directions
Cook brown rice according to packaging. Chop veggies/tofu and sautee/steam while rice is cooking. Add to rice once rice is cooked. Toss with yellow curry sauce.

Serving Size: makes 4 side dishes or two entree dishes
