Mike's Magnificent Bean Bowl

Ingredients
salad:1 (15 oz.) can of light red kidney beans1 (15 oz.) can of cannellini beans (white kidney beans)1 (15 oz.) can of great northern beans10 oz. of frozen sweet corn, thawed1 medium red onion, diced1 medium green bell pepper, chopped1 medium red bell pepper, chopped1 jalapeno pepper, seeded, deveined, diceddressing:1/2 cup extra virgin olive oil1/2 cup red wine vinegar1 tbsp of lemon juicejuice and zest of 1 lime3 garlic cloves, minced fine1 handful fresh flat leaf parsley, chopped3 tbsp of sugar1 1/4 tbsp of salt1/2 tbsp of black pepper1/2 tbsp of ground cumin1/2 tbsp of chili powderdash of hot saucedash of worcestershire sauce** any kind of cooked beans can be used, these are just my personal favorites** for a more mexican flavor, substitute cilantro for parsley
Directions
1. Drain and rinse beans and corn. Combine in large mixing bowl with onion and peppers.

2. Whisk together ingredients for dressing. Pour over salad. Mix to coat salad.

3. Chill thoroughly, at least 1 hour, and serve cold.

** Flavors will continue to improve as it sits. For best results, make a day ahead and chill overnight.
