Parsley Potatoes

4 large potatoes, peeled & cubed3 green onions, sliced thin3 tbls fresh parsley, minced2 tbls garlic, minced1 tsp sea salt1 tsp black pepper1 stick butter
Peel & dice 4 large potatoes, place in boiling pot of water. Cook until fork-tender. Drain potatoes and remove from pot.
Saute onions, garlic, parsley, salt & pepper in butter til onions are transparent.
Fold potatoes into mixture carefully, and serve.
Makes 6 1 cup servings
