low fat spinach lasagna rollups

Ingredients
16 lasagna noodles2 C lowfat ricotta cheese2 C 1% cottage cheese2 oz lowfat mozzerella cheese- shredded3 cups fresh spinach-chopped1 C chopped onions1 - 28 oz can crushed tomatoes3 T dried basil1 T dried oregeno2 T garlic powder2 T dried parsley1 T black pepper1T water
Directions
in large pot boil water and cook noodles fully

in large nonstick saucepan- cook spinach until wilted and remove
add onions to saucepan and cook w/ 1 T water until slightly soft
add crushed tomatoes, garlic, basil, oregeno, pepper to saucepan with onions and simmer for 30-45 minutes

in large bowl- mix cottage cheese, ricotta, dried parsley and cooked spinach (divide this into 18 servings)

take one noodle and spoon cheese and spinach mix over entire length- roll up and place in large sprayed casserole pan- repeat until all noodles and cheese mix finished

spoon tomato sauce over rollups sprinkle mozzerella cheese over top, cover with foil and bake for approx. 20 minutes at 350 degrees
