Fresh Pesto & Shrimp Pasta

1/4 cup pine nuts2 Tbsp garlic, minced1/4 cup grated Parmesan cheese1 1/2 cups loosely packed fresh basil1/2 cup extra-virgin olive oil1/2 lb medium shrimp, cooked8 oz small dried pasta shellsolive oil, as neededsalt & pepper, to taste
Using a blender or food processor, coarsely chop nuts and add the garlic, cheese and basil, then process until finely chopped. Slowly add the oil, blending until incorporated, and season lightly with salt and pepper, set aside.
In a large pot of boiling salted water, cook pasta shells until tender and drain.
While pasta is cooking, lightly season shrimp with salt and pepper and saute in a large pan with a light amount of olive oil over medium heat, about 6-8 minutes.
Combine shrimp and pasta in a large serving bowl, toss with the fresh pesto until well combined and serve immediately.
