Banana Bread

Ingredients
1 1/3 cups GEMS flour1/3 cup semi sweet chocolate chips1/3 cup granulated sugar1 tbsp. baking powder1/2 tsp guar gum1/2 tsp salt1 cup mashed rip e banana (2 large)2/3 cup milk1/4 cup vegetable oil
Directions
1. Preheat oven to 350 degrees F. Lightly grease 8 x 4 inch loaf pan.
2. In mixing bowl combine GEMS flour, chocolate chips, sugar, baking powder, guar gum and salt.
3. In separate bowl blend the banana, milk and oil.
4. Pour in wet mixture into centre of dry ingredients and lightly mix to blend.
5. Spoon batter into prepared pan. Bake until loaf is springy to touch or toothpick inserted in centre comes out clean, about 35 to 40 minutes.
6. Cool on rack 10 minutes before turning out of pan.

Yield: One 8 x 4 inch loaf. (16 half inch slices)
