Fava Bean Salad

Ingredients
1 (19 ounce) can favabeans, drained2 medium fresh tomatoes,chopped1 small onion, diced1 cucumber, diced2 cloves garlic, minced1/4 cup chopped freshparsley1 lemon, juiced3 tablespoons olive oil1 teaspoon ground cuminsalt and black pepper totaste
Directions
Combine fava beans, tomatoes, onion, and cucumber in a salad bowl. Toss with garlic, parsley, lemon juice, and olive oil. Season with cumin, and salt and pepper to taste.

Our favorite way to eat this is to serve it over some jasmine rice with a sprinkle of feta cheese. yum!
