Toddler Chicken Nuggets

Ingredients
1 lb boneless skinless chicken, pureed in food processor1/4 block extra firm tofu, pureed1 egg, pureed1/2 tsp garlic powder1/2 tsp onion powder1/2 tsp saltpinch of pepper1/2 c italian bread crumbs1 Tbsp olive oil, extra light
Directions
Puree all ingredients except for breadcrumbs and oil. Form into a log shape on piece of plastic wrap, wrap tightly and refrigerate about 1 hour. Slice meat mixture (will be very soft and pliable) into desired size and shape, and roll in breadcrumbs before sauteeing in the olive oil over medium heat, approximately 2 minutes on each side.

Serving Size: Makes approximately 40 1/2 ounce sized nuggets
