Cream of vegtable soup

Ingredients
8 cups low sodium chicken stock6 cups frozen or fresh vegtables1 cup half and half1 cup any cheese1 potato (optional)2 carrotts1 small onion2 + cups water spices to taste
Directions
Bring carrots, onions, water, chicken broth and any other seasoning to a boil and cook vegtables until tender. Add frozen vegtables and simmer for 30 minutes. Remove from heat and use hand blender in pot to pure until desired consistancy. Return to heat add cream and dilute with lowfat milk or additional water if too thick. Simmer gently to rewarm and mingle flavors.
