Yummy Turkey Meatloaf Muffins

Ingredients
2 packages Jennie O Extra Lean Ground Turkey - or 2.5lbs equivilent1/2 cup of panko bread crumbs1/2 large green bell pepper diced1/2 large yellow onion diced1 can (drained) diced tomatoes with basil/garlic/oregano (no salt added)3 egg whitesdash of worcesteshire saucedash of salt (I use salt substitute)dash of black pepperdash of salt free Mrs. Dash
Directions
combine all ingredients in a bowl and mix well. Divide equallly into greased muffin tins bake at 375 for about 40 minutes.

Makes 18 standard muffins, 2-3 muffins is a very healthy portion size per person.

    Very good but better limit yourself to two. I added some grated carrot and a bit of finely chopped celery instead of the green pepper. - 2/27/20

    I made this for dindin last night and had to keep myself from eating more than 2! I doubled the veg and I added BBQ sauce to the tops of each muffin for the last 5 minutes of cooking. I will def make again. A keeper! - 2/24/20
