Chicken Broccoli Potato Casserole

Ingredients
2 cups shredded lowfat cheddar cheese3 tbsp whole wheat flour2 cups milk3 tbsp olive oil1.25 lb skinless chicken, diced in 1.5" squares4 cups sliced potatoes3 cups chopped broccoli1 large onion, diced
Directions
Make a lowfat white sauce by heating the olive oil, working the whole wheat flour into it, working the milk into it smoothly (without lumps), and adding 1.5 cup of shredded cheese.
Combine the sauce with the chicken, broccoli, potato and onion, and mix well.
Place the mixture in a 3 quart casserole dish
Bake at 375 for 50 mins.
Sprinkle the rest of the cheese on top
Bake at 375 for 15 more mins.
