Golden Carrot Muffins

Ingredients
3 c. whole wheat flour1 T. baking soda3 1/2 c. carrot pulp1 c. pineapple pulp1 c. honey2 T. cinnamon1 t. nutmeg6 egg whites1 T. vanilla1 c. canola oil1 1/2 c. chrushed walnuts
Directions
Preheat oven 350. Grease muffin pans. Mix 1st 4 ingred together w/ cinnamon & nutmeg. Dough is stiff. I had to use my hands! MIx egg whites, vanilla, honey, & oil in seperate bowl, then mix in w/ pulp mixture. Mix in nuts. Fill muffin pan. Bake 45 minutes. I have a convection oven...it only took 23 minutes.
