Mini Veggie Frittatas- 1 full serving of Veggies!

Ingredients
Milk, 2%, .5 cup Mushrooms, fresh, 1 cup, pieces or slices Onions, raw, .66 cup, chopped Green Peppers (bell peppers), 1 cup, chopped Zucchini, 1 cup, slicedOlive Oil, 1 tbspEgg substitute, liquid (Egg Beaters), 2 cupRicotta Cheese, part skim milk, .5 cup Parmesan Cheese, grated, 1 cup
Directions
preheat oven to 350
spray muffin tins
mix eggs and milk
heat olive oil and cook veggies for about 5 mins
fold veggies into egg mixture
stir in ricotta and 1/2 Parmesan cheese

fill muffin cups 3/4 of the way full
sprinkle with remaining cheese
bake 20-30 mins until set and brown
