Snickerdoodles (lightened up)

Ingredients
1/2 C. shortening6 Tbsp solid pack pumpkin1 ½ C. sugar2 egg whites1 tsp baking soda1/4 tsp salt2 tsp cream of tartar2 2/3 cups flour-¼ cup sugar1 tsp pumpkin pie spice
Directions
Beat together shortening, pumpkin, sugar and egg whites. Add flour, cream of tartar, baking soda and salt. Mix together. Pinch off a small amount and roll into a small ball (about 1”) Roll in pumpkin pie spice-sugar mixture and place on a greased cookie sheet. Bake at 375 degrees for 10-12 minutes. Cookies are done when they are lightly browned. Do not overbake or they will be crispy instead of soft.
