1 (7oz) package of Red Quinoa, cooked and then chilled1 (12oz) package of frozen sweet corn, thawed1 cup finely chopped fresh cilantro1 cup thinly sliced green onions2 plum tomatoes, diced2 avocados, peeled pitted and cubed 1/2 cup Light Balsamic Vinaigrette(1/2 tsp salt and 1/2 tsp pepper if desired, not in nutritional calculations)
Mix quinoa, corn, cilantro, green onions and tomatoes into a bowl. Fold in avocados and dressing. (Season with salt and pepper if desired.)
Serve chilled.
