*Arborio Rice (Risotto Rice), Dry, Uncooked, 1.5 cup *College Inn Chicken Broth - 99% Fat Free, 2 cup Onions, raw, 1 small *Holland House Cooking White Wine, 8 oz Water, tap, 1 cup (8 fl oz) Butter, unsalted, 2 tbsp Parmesan Cheese, grated, 0.25 cup *Italian Herb Seasoning - McCormick, 0.5 tsp
In a saucepan, simmer chicken broth, white wine and water. Keep on low heat. In a 3 qt heavy saucepan, melt 2 tbsp of butter and saute onion until soft. Add the rice and stir until thoroughly coated. Add 1 cup simmering broth mixture and stir constantly until liquid is absorbed. Continue cooking on low to medium heat, adding 1/2 cup broth mixture at a time until rice is creamy but al dente (about 20 minutes). Add parmesan cheese, Italian seasoning, and salt and pepper to taste.
