Crustless Quiche part 2(Peameal Bacon, Broccoli & cheese)

1/4 c red onion diced1 tsp minced garliccooking spray1 head broccoli ( 1c) chopped 4 egg whites2 eggs1 1/4c 1% milk2 TBSP light (5%) sour cream1 tsp dijon mustard8oz (uncooked) peameal bacon (about 6 slices)2/3 c shredded mozzarella cheese3 dashes hot sauce or tobasco sauce2 dashes black pepper
Preheat oven to 400 degrees.
Spray a 10 inch round stoneware casserole or pie plate with cooking spray (or use a deep dish regular pie plate).
Cook peameal bacon and chop.
In peameal bacon pan, add garlic, onion and broccoli - stir fry for a couple of minutes (broccoli will turn bright green). remove from heat.
Meanwhile, in a large bowl whisk together egg whites and eggs, add milk, sour cream, flour, baking powder, dijon mustard, cumin, tobasco sauce, pepper.
Add broccoli mixture and bacon. Add cheese. Pour into Pie plate. make sure everything is even mixed.
Bake uncovered for 40 min. Remove from oven and let sit for 5 min.
Serving Size: makes 6 servings (1/6 of pie)
